Simply put, Cow's Bargain by Darkmind and Flibinite is one of the best gentle hucow stories out there. Its procession is gradual, the transformation of Catherine just as much so. The heat can at times be blueballing, Catherine's sexual satisfaction can only be found through her own self pleasure for the majority of the story. But the journey is worth it. Oh is it worth it!
